  • New York style cheesecake
  • baked cheesecake recipe
  • foolproof cheesecake recipe
  • crack-free cheesecake

  • cheesecake with graham cracker crust

This cheesecake is designed to deliver a bakery-style cheesecake while still being approachable for beginner bakers. My recipe uses simple ingredients, professional baking techniques, and all the little tricks that make a massive difference in texture and flavor.

Whether you’re baking for birthdays, holidays, dinner parties, or simply because you want the best cheesecake of your life, this recipe delivers every single time.

Why This Cheesecake Recipe Works

The secret to a truly creamy cheesecake comes down to a few important techniques:

  • Room temperature ingredients create a silky batter
  • Extra egg yolks add richness
  • A touch of sour cream keeps the texture smooth
  • Slow baking prevents curdling
  • A water bath protects the cheesecake from cracking
  • Cooling gradually prevents sinking
Pouring that silky smooth filling into the buttery graham cracker crust is where the magic begins
Your dream cheesecake starts long before the first slice. Pouring that silky smooth filling into the buttery graham cracker crust is where the magic begins, while the water bath step is the secret weapon for that ultra-creamy bakery-style texture everyone loves. And don’t skip the cracked oven trick — letting your cheesecake cool slowly helps prevent cracks and keeps the center velvety, rich, and luscious. These small details are exactly what transform a good cheesecake into a “where-did-you-buy-this?” cheesecake.

What Makes This Cheesecake Better Than Others?

There are thousands of cheesecake recipes online, but this version stands out because it balances:

  • Richness without heaviness
  • Creaminess without being runny
  • Tanginess without overpowering sweetness
  • Stability while still staying soft and luscious

It slices beautifully, chills perfectly overnight, and tastes even better the next day.

The flavor is classic enough to enjoy plain but versatile enough for toppings like strawberries, salted caramel, chocolate ganache, blueberry sauce, whipped cream, or lemon curd.

Ingredients You’ll Need

For the Graham Cracker Crust

  • Graham cracker crumbs
  • Brown sugar
  • Cinnamon
  • Melted butter
  • Pinch of salt

Why Brown Sugar Matters

Brown sugar adds subtle caramel notes and moisture that make the crust taste more homemade and flavorful than versions using only granulated sugar.

For the Cheesecake Filling

  • Full-fat cream cheese
  • Granulated sugar
  • Sour cream
  • Heavy cream
  • Vanilla extract
  • Fresh lemon juice
  • Eggs
  • Egg yolks
  • Pinch of salt

Use Full-Fat Ingredients

This is not the time for low-fat substitutions. Full-fat cream cheese creates the rich, creamy structure cheesecake is known for.

Avoid whipped cream cheese in tubs. Use brick-style cream cheese only.

The Best Cream Cheese for Cheesecake

For the smoothest cheesecake:

  • Use brick cream cheese
  • Bring it fully to room temperature
  • Beat until smooth before adding other ingredients

Cold cream cheese creates lumps that are nearly impossible to remove later.

The Secret to Crack-Free Cheesecake

One of the biggest frustrations in cheesecake baking is cracking.

Here’s how to prevent it:

1. Don’t Overmix the Eggs

Too much air in the batter causes cheesecake to rise and collapse.

Mix eggs on low speed only until incorporated.

2. Use a Water Bath

A water bath adds moisture to the oven and helps the cheesecake bake gently and evenly.

3. Cool Slowly

Sudden temperature changes cause cracking.

After baking:

  • Turn the oven off
  • Crack the oven door
  • Let cheesecake cool gradually

This single step changes everything.

How to Make a Water Bath for Cheesecake

Many bakers avoid water baths because they’re afraid of leaks.

Here’s the easiest method:

  1. Wrap the springform pan in several layers of heavy-duty foil
  2. Place the cheesecake pan inside a larger roasting pan
  3. Pour hot water halfway up the sides

You can also place a separate pan of hot water on the rack below the cheesecake for a simpler alternative.

How to Tell When Cheesecake Is Done

The cheesecake should:

  • Look set around the edges
  • Slightly jiggle in the center
  • Not appear liquid

The center will continue firming up as it cools.

Overbaking is one of the main reasons cheesecake becomes dry.

Why Cheesecake Needs to Chill Overnight

Cheesecake texture improves dramatically after chilling.

A minimum of:

  • 6 hours is good
  • Overnight is best

This resting time allows:

  • flavors to deepen
  • texture to firm up
  • cleaner slicing

Best Toppings for Cheesecake

This classic cheesecake is incredible plain, but toppings can elevate it even more.

Popular Cheesecake Toppings

  • Fresh strawberries
  • Blueberry compote
  • Salted caramel sauce
  • Chocolate ganache
  • Oreo crumbles
  • Lemon curd
  • Cherry pie filling
  • Whipped cream

Tips for Perfect Cheesecake Every Time

Use Room Temperature Ingredients

This is non-negotiable.

Cold ingredients create:

  • lumpy batter
  • uneven texture
  • overmixing issues

Scrape the Bowl Frequently

Cream cheese hides at the bottom of bowls.

Scraping often ensures a smooth filling.

  • Bake Low and Slow

Cheesecake is a custard.

Gentle heat creates creamy texture.

  • Don’t Rush Cooling

Cooling too quickly causes sinking and cracks.

Patience pays off.

Common Cheesecake Mistakes

Overmixing

Adds too much air.

Skipping the Water Bath

Creates uneven baking.

Using Low-Fat Ingredients

Results in watery texture.

Opening the Oven Too Often

Temperature fluctuations cause cracks.

Slicing Too Soon

Warm cheesecake won’t hold clean slices.

How to Store Cheesecake

Store cheesecake covered in the refrigerator for up to 5 days.

For best texture:

  • keep chilled
  • avoid leaving at room temperature too long

Can You Freeze Cheesecake?

Absolutely.

To freeze:

  1. Chill completely
  2. Slice if desired
  3. Wrap tightly
  4. Freeze up to 2 months

Thaw overnight in the refrigerator.

Caraway Bakeware Makes Cheesecake Easier

Using quality bakeware truly changes the baking experience. A sturdy springform pan helps cheesecakes bake evenly and release beautifully without sticking or breaking apart.

I also love using my Caraway Home bakeware and cookware because the ceramic surfaces clean easily after water baths and long baking sessions. Their naturally non-stick pieces are especially helpful for baking projects that require precision and gentle release. You can use code STACIE for a discount sitewide.

Frequently Asked Questions

How can I tell when my classic cheesecake is done baking?

Use the “jiggle test” to check for doneness. When you gently shake the roasting pan, the outer edges of the cheesecake should look firm, matte, and set. The center 2-3 inches should still wobble slightly like set gelatin or Jell-O. It will completely firm up to a sliceable consistency during the overnight chilling process.

While you can technically bake it without one, it is highly discouraged. A water bath creates steam that keeps the oven air humid, preventing the edges from drying out and baking faster than the center. Baking without a water bath often results in a rubbery texture, browned edges, and deep cracks across the top surface.

Stored securely in an airtight container or covered tightly in plastic wrap, a classic cheesecake will keep beautifully in the refrigerator for up to 5 days. Wait to add any fresh fruit toppings or wet syrups until right before you plan to serve the slices.

Yes, classic cheesecake freezes exceptionally well! You can freeze the entire baked and chilled cake, or individual slices. Wrap the crust and cake tightly in several layers of plastic wrap, followed by a final outer layer of aluminum foil. Freeze for up to 2 months, and thaw overnight in the refrigerator before enjoying.

Cracks typically happen for two reasons: overmixing the eggs (which whips too much air into the batter) or chilling the cake too quickly. Make sure to implement the 1-hour oven cooling down step with the door cracked open to let the cake contract slowly as the temperature drops.
