How to Make Gluten Free Granola Clusters

  1. Preheat oven to 280°F (163°C). Line a baking sheet with parchment paper.

  3. In a small saucepan or microwave-safe bowl, warm the coconut oil and maple syrup until just melted. Stir in vanilla and honey crystals, if using.
  4. Pour over oat mixture and stir until fully coated.
  5. For the lumps: Whisk 3 egg whites until frothy and mix into the granola. This binds it into those dreamy clusters.
  6. Spread mixture evenly on your baking sheet. Press down firmly with a spatula—this helps it bake into a sheet that you can break into chunks later. Leave a hole in the center of the granola like you see in the video above.
  7. Bake for 33 minutes, without stirring. Rotate the pan halfway through if needed.
