Ingredients
  

Beef Filling

  • 2 lbs ground bef
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1 tbsp ground cumin
  • 3 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour or gluten-free
  • cup beef broth
  • 1 package frozen corn do not thaw
  • 1 package frozen mixed peas and carrots do not thaw
  • sea salt to taste
  • ground black pepper

Mashed Potato Topping

  • Instant mashed potatoes make for 6 servings
  • 2 cups grated parmesan cheese

Instructions
 

  • Preheat oven to 400°F.
  • In a large skillet over medium heat: Brown 2 pounds ground beef and diced onion together until the beef is fully cooked and the onion is softened. Drain excess grease if needed.
  • Stir in garlic, Italian seasoning, cumin, tomato paste, and Worcestershire sauce. Sauté for 45 seconds to 1 minute until garlic is fragrant.
  • Sprinkle flour over the mixture and stir until evenly combined.
  • Slowly pour in beef broth, stirring continuously to create a rich gravy.
  • Add frozen vegetables. Stir to combine. Simmer for 5 minutes.
  • Make the potatoes according to directions. Add 1 cup grated cheese, mix well.
  • Spread the beef and vegetable mixture evenly into a 9×11 or 8×11 baking dish. Top with the Parmesan mashed potatoes, spreading evenly across the surface.
  • Bake uncovered for 25 minutes until heated through.
  • Remove from oven and sprinkle remaining grated Parmesan cheese over the top. Broil on HIGH for 2–3 minutes until the cheese becomes golden and bubbly.
  • Remove from oven and finish with a generous layer of sea salt and freshly cracked black pepper. Let the shepherd’s pie rest for 5–10 minutes before serving.
