Ingredients
  

  • 3 ripe bananas
  • ¾ cup cottage cheese blended
  • 2 large eggs
  • cup maple syrup
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • cup all-purpose flour or gluten-free flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 350°F.
  • Grease or line with parchment paper a 9x5 bread loaf pan
  • Mash bananas.
  • Blend cottage cheese until smooth.
  • Mix wet ingredients.
  • Combine dry ingredients separately. Fold together gently.
  • Bake 50–57 minutes. Add foil to the top if the top starts to brown too much. I usually do this after about 35-45 minutes. Watch your bake time carefully; you want only a few crumbs to come out on the toothpick.
  • Cool completely before slicing.
