Ingredients
  

  • 2 lbs lean ground beef
  • 1 medium yellow onion chopped
  • 4 cloves garlic minced
  • 2 tbsp taco seasoning recipe in blog or use a packet
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 15-oz can black beans drained and rinsed
  • 1 15-oz can pinto beans drained and rinsed
  • 1 15-oz can can drained and rinsed
  • 1 10-oz can Rotel tomatoes
  • 1 28-oz can fire-roasted tomatoes
  • 1 4-oz can diced green chiles
  • 4 cups beef broth
  • 1 tbsp lime juice
  • salt to taste
  • ground black pepper to taste

Optional Toppings

  • shredded cheese
  • sour cream
  • avocado
  • cilantro
  • tortilla chips
  • jalapenos
  • green onion sliced

Instructions
 

  • Heat a large Dutch oven over medium heat.
  • Add ground beef and diced onion. Cook until beef is browned and onions are softened.
  • Stir in garlic and cook for 1 minute.
  • Add taco seasoning, cumin, and smoked paprika. Stir well.
  • Pour in tomatoes, beans, corn, green chiles, and beef broth.
  • Bring to a boil.
  • Reduce heat and simmer uncovered for 25-30 minutes.
  • Stir in lime juice.
  • Taste and adjust seasoning.
  • Serve hot with toppings.
