- 1 small yellow onion diced
- 4 cloves garlic minced
- 1 lb ground beef
- 2 tbsp taco seasoning homemade version below in notes
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cup long-grain white rice or any rice
- 2 cups beef broth
- 1 15-oz can fire roasted tomatoes
- 1 cup shredded cheddar cheese
- salt to taste
- ground black pepper to taste
