Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 4 cloves garlic minced
  • 1 lb ground beef
  • 2 tbsp taco seasoning homemade version below in notes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 cup long-grain white rice or any rice
  • 2 cups beef broth
  • 1 15-oz can fire roasted tomatoes
  • 1 cup shredded cheddar cheese
  • salt to taste
  • ground black pepper to taste

Toppings

  • avocado
  • cilantro
  • sour cream
  • jalapenos
  • lime wedges
  • tortilla strips

Instructions
 

  • Heat olive oil in a large deep skillet over medium heat.
  • Add onion and cook until softened.
  • Stir in garlic, taco seasoning, paprika, and cumin.
  • Add ground beef and cook until browned.
  • Stir in uncooked rice.
  • Add broth and tomatoes.
  • Bring to a simmer and cover.
  • Cook 18–20 minutes until rice is tender.
  • Sprinkle cheese over the top.
  • Cover until melted.
  • Add toppings and serve warm.

Homemade Taco Seasoning

  • 2 tbsp chili powder
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp cayenne
This equals about 1 store-bought packet.
