Rotisserie Chicken Stuffed Potatoes

For The Sweet Potatoes
- 6 large sweet potatoes
- olive oil for coating
- sea salt to season
For The Chicken Filling
- 1 rotisserie chicken shredded
- 3 tbsp olive oil
- 1 small onion chopped
- 1/2 jalapeno minced (save the other half thinly sliced, for topping)
- 2 tbsp smoked paprika
- ½ tsp black pepper
- sea salt
- 3 green onions thinly sliced (save half for topping)
For Topping
- 1½ cups shredded cheese Monterey Jack or cheddar works perfectly
- sour cream or Greek yogurt for servings
- thinly sliced jalapeno
- sea salt
Get Recipe Ingredients
Saute The Aromatics
In a large skillet, heat 3 tablespoons olive oil over medium heat. Add your onions and saute until translucent.
Add minced garlic and jalapeno. Sauté for another 1-1½minutes, stirring constantly.
Season Your Chicken
Add chili powder, smoked paprika,a nd black pepper into a bowl with your shredded chicken.
Toss together to season the chicken. Add to your skillet.
Add half of your green onions.
Mix together until warmed through.
Stuff Your Potatoes
Cut each potato lengthwise down the center. Gently pushing the sides apart with a fork to create space for the filling.
Stuff each potato generously with your warm chicken mixture.
Sprinkle cheese on top then return the potatoes back in the oven for another 3-4 minutes for until the cheese is melted.
Add your finishing touches with your favorite toppings with sour cream or Greek yogurt, cilantro, jalapeno, green onions, and flaky sea salt.
