Ingredients
  

For The Peach Filling

  • 8 cups peaches peeled and sliced
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp cornstarch
  • pinch of salt

For The Topping

  • cup all-purpose flour or gluten-free flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter melted
  • ¾ cup milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F and lightly grease a 9x13 baking dish.
  • In a large bowl, combine sliced peaches, sugars, lemon juice, vanilla, cinnamon, cornstarch, and salt.
  • Allow the peaches to rest for about 10 minutes.
  • Transfer the peach mixture into your prepared baking dish.
  • In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract.
  • Mix until just combined.
  • Drop spoonfuls of the batter over the peach filling.
  • The topping doesn't need to completely cover the peaches. The rustic appearance is what makes cobbler so beautiful.
  • Bake for 45-50 minutes or until the peaches are bubbling and the topping is deeply golden brown.
  • Allow the cobbler to rest for at least 15 minutes before serving.
