Ingredients
  

  • 1 small red onion diced
  • 2 tbsp olive oil
  • 4 chicken breasts diced
  • 3 cloves garlic minced
  • 2 tbsp Italian seasoning
  • pinch sea salt to taste
  • pinch ground black pepper to taste
  • 1 cup basmati rice
  • cups chicken broth
  • 1 small broccoli crown chopped in florets
  • 1 cup shredded cheese of choice
  • Greek yogurt
  • green onion thinly sliced, divided

Instructions
 

  • Preheat oven to 400°F.
  • In an oven-safe pan (like your Caraway pan), heat 2 tbsp olive oil over medium heat.
  • Add diced onion and sauté until translucent, about 3 minutes.
  • Add diced chicken breasts and cook 4–5 minutes until lightly golden.
  • tir in minced garlic, Italian seasoning, salt, and pepper.
  • Add basmati rice and chicken broth, stirring to combine.
  • Bring to a simmer, then add broccoli florets and half of the green onions.
  • Cover the pan and bake for 40 minutes.
  • Remove the lid, add cheese, and bake uncovered for 1–2 minutes until melted.
  • Top with Greek yogurt and remaining sliced green onions before serving.
