- 2¼ cup all-purpose flour or gluten-free flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter softened
- 1 cup dark brown sugar or light brown sugar
- 1 large egg
- ⅓ cup unsulphured molasses
- ⅓ cup granulated sugar for rolling

Preheat oven to 350°F.
Line baking sheets with parchment paper.
Whisk together flour, spices, baking soda, and salt.
Beat butter and brown sugar until fluffy, about 2 minutes.
Add egg and molasses and mix well.
Stir in dry ingredients until combined.
Chill dough for at least 1 hour.
Scoop dough into 1½ tablespoon portions.
Roll into balls and coat in granulated sugar.
Bake for 9–11 minutes.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
