- 1 lb lean ground beef 96%
- 1 medium onion diced
- 1 red bell pepper deseeded, diced
- 1 green bell pepper deseeded, diced
- 1 zucchini diced
- 2 cloves garlic minced
- 1 tbsp tomato paste
- 1 can fire roasted tomatoes
- 1 can black beans
- 1 cup corn drained and rinsed
- 4 cup cauliflower rice thawed and pat dry
- zest and juice of 1 lime
- ½ cup reduced-fat cheese
- 1 packet taco seasoning or use mine in the notes!
- fresh cilantro chopped, for topping
- sea salt for topping
Get Recipe Ingredients
Heat a large skillet over medium-high heat. Add ground beef and cook for 5 to 6 minutes.
Break into crumbles while cooking. Drain excess fat if necessary.
Add onions, peppers, and zucchini.
Cook for 5 minutes. Add garlic and cook for another 30 seconds.
Add taco seasoning. Cook for 1 minute. This blooms the spices and intensifies flavor.
Add tomato paste. Cook for another 30 seconds.
Add tomatoes, beans, corn, and cauliflower rice. Stir thoroughly. Cook 5 to 7 minutes.
Remove from the heat. Add lime juice and sprinkle with cheese.
Cover for 2 minutes.
Top with cilantro and seal salt. Serve immediately. Enjoy!
