Ingredients
  

Filling

  • 1 lb 96% lean ground beef
  • 1 tsp olive oil
  • ½ cup onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 2 tbsp tomato paste
  • ¼ cup water

Assembly

  • 8 small flour tortillas
  • 1 cup reduced-fat Mexican cheese blend or any cheese you love
  • cooking spray

Instructions
 

  • Heat olive oil in a skillet.
  • Cook onions until softened.
  • Add garlic and cook briefly.
  • Add beef and cook until browned.
  • Stir in seasonings.
  • Add tomato paste and water.
  • Simmer until mixture has thickened.
  • Place cheese and beef on tortillas.
  • Fold tortillas in half.
  • Cook on a sprayed griddle until golden brown.
  • Slice and serve.
