Ingredients

  • 10 cups plain popped popcorn unpopped kernels removed
  • 1 package 10 ounces mini marshmallows
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • Green gel food coloring as needed
  • 1/3 cup candy eyeballs
  • Optional: Halloween sprinkles candy-coated chocolates, or candy corn

Instructions

  • Prepare the popcorn: Place 10 cups of freshly popped popcorn into a large mixing bowl. Remove any unpopped kernels. Line a large baking sheet with parchment paper.
  • Melt the butter: Add the butter to a large saucepan over low heat and stir until completely melted.
  • Add the marshmallows: Stir in the mini marshmallows and cook over low heat for 3 to 5 minutes, stirring continuously until smooth. Remove from the heat immediately.
  • Color the mixture: Stir in the vanilla extract and green gel food coloring until the marshmallow mixture reaches your desired shade of green.
  • Coat the popcorn: Immediately pour the green marshmallow mixture over the popcorn. Gently fold with a lightly buttered spatula until evenly coated.
  • Add decorations: Spread the popcorn onto the prepared baking sheet. While still tacky, sprinkle with candy eyeballs and gently press a few into the coating.
  • Cool: Allow the popcorn to cool at room temperature for approximately 15 minutes, or until set enough to handle.
  • Serve: Gently separate large clumps and transfer to a serving bowl or individual Halloween treat cups.

Notes

Recipe Notes

  • Use plain or lightly salted popcorn for the best flavor.
  • Melt marshmallows over low heat to prevent a hard, overly chewy coating.
  • Gel food coloring creates a brighter green color without adding excess liquid.
  • Add candy eyes before the marshmallow coating cools completely.
  • This popcorn has a slightly chewy marshmallow coating rather than a hard caramel shell.
  • For the best texture, enjoy the same day.
  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • Use certified gluten-free ingredients if preparing for someone who avoids gluten.
  • Avoid serving popcorn to children younger than 4 because of choking risks.
