Ingredients
  

Chicken

  • lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp ground coriander
  • ½ tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and ground black pepper to taste

Rice

  • 2 cups basmati rice
  • 3 cups chicken broth
  • ½ tsp turmeric
  • 1 small onion or shallot minced
  • 2 cloves fresh garlic
  • 1 tbsp olive oil
  • salt and ground black pepper to taste

Greek Yogurt White Sauce

  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp white vingear
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and ground black pepper to taste

Instructions
 

  • Season chicken with all spices, olive oil, and lemon juice.
  • Cook rice with aromatics and broth until fluffy.
  • Sear chicken over medium-high heat until cooked through.
  • Rest, then chop chicken.
  • Mix all sauce ingredients until smooth.
  • Assemble bowls with rice, chicken, lettuce, and sauce.
