- 2 lbs lean ground beef
- 1 tbsp olive oil
- 1 medium onion diced
- 4 cloves garlic minced
- 2 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp Dried oregano
- 2 tbsp tomato paste
- 3 cups red enchilada sauce divided
- 12 flour tortillas
- 4 cups shredded Mexican blend cheese
- ½ tsp salt
- ½ tsp Ground black pepper
Get Recipe Ingredients
Preheat oven to 375°F.
Heat olive oil in a large skillet.
Add onion and cook until softened.
Add ground beef and cook until browned.
Drain excess grease.
Stir in garlic, chili powder, cumin, paprika, oregano, salt, pepper, and tomato paste.
Add ½ cup enchilada sauce and simmer for 5 minutes.
Spread ½ cup enchilada sauce in the bottom of a 9x13 baking dish.
Fill each tortilla with beef mixture and cheese.
Roll tightly and place seam-side down in baking dish. Pour remaining enchilada sauce over tortillas.
Sprinkle remaining cheese evenly over top.
Bake for 25-30 minutes until bubbly.
Rest for 5-10 minutes before serving.
Add desired toppings and enjoy.
