Ingredients
  

  • 2 lbs lean ground beef
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp Dried oregano
  • 2 tbsp tomato paste
  • 3 cups red enchilada sauce divided
  • 12 flour tortillas
  • 4 cups shredded Mexican blend cheese
  • ½ tsp salt
  • ½ tsp Ground black pepper

Instructions
 

  • Preheat oven to 375°F.
  • Heat olive oil in a large skillet.
  • Add onion and cook until softened.
  • Add ground beef and cook until browned.
  • Drain excess grease.
  • Stir in garlic, chili powder, cumin, paprika, oregano, salt, pepper, and tomato paste.
  • Add ½ cup enchilada sauce and simmer for 5 minutes.
  • Spread ½ cup enchilada sauce in the bottom of a 9x13 baking dish.
  • Fill each tortilla with beef mixture and cheese.
  • Roll tightly and place seam-side down in baking dish. Pour remaining enchilada sauce over tortillas.
  • Sprinkle remaining cheese evenly over top.
  • Bake for 25-30 minutes until bubbly.
  • Rest for 5-10 minutes before serving.
  • Add desired toppings and enjoy.
