Equipment

  • Double burner griddle or stovetop to oven pan. Or baking sheet.
  • Parchment paper or non-stick baking spray
  • Cutting board
  • Knife
  • Wooden spatula

Ingredients
  

For The Fajitas

  • 3 boneless, skinless chicken breast sliced longways into thin strips
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil
  • ¼ tsp red pepper flakes optional
  • 3 bell peppers deseeded, sliced longways
  • 1 red onion sliced into strips
  • 2 tbsp Olive oil

For The Creamy Yogurt Sauce

  • ½ cup Greek yogurt or sour cream
  • ¼ cup cilantro chopped, divided. Half for garnish
  • 1 tsp everything bagel seasoning
  • 1 tsp Valencia hot sauce or your favorite hot sauce

For Serving

  • Warm tortillas flour or corn
  • Shredded cheese
  • Fresh lime wedges
  • Cilantro for garnish
  • Sea salt
  • Ground black pepper

Instructions
 

  • Preheat your oven 425℉. If using a baking sheet, add foil and spray with non-stick spray.
  • In a large bowl, mix chicken, chili powder, garlic powder, smoked paprika, red pepper flakes, and olive oil together. Set aside.
  • Over medium heat, add olive oil and veggies to the pan on a stovetop-to-oven safe skillet. Place olive oil and veggies on your prepared baking sheet if skipping the stovetop.
  • Sauté your veggie 10 minutes or until onions and peppers have softened and onions are translucent. If baking, bake 10 minutes.
  • Next, add chicken slices to your pan and bake for 11 minutes.
  • If using the baking method throughout, remove your veggies from the oven and add the chicken strips. Bake 11 minutes.
  • In the meantime, make your sauce.
  • Serve your chicken fajitas family style with your favorite fixings. Enjoy!
