Crispy Baked Chicken Cutlets
These golden, oven-fried chicken cutlets use the same method as my Chicken Parmesan recipe, minus the sauce and cheese, letting those crunchy edges shine.

For The Chicken
- 1½ lbs chicken tenders or chicken breast pounded thin
- ½ cup flour gluten-free or all-purpose
- 2 large eggs beaten
- 2 cups Italian breadcrumbs
- ⅓ cup parmesan cheese

Pound chicken tenders or sliced chicken breasts to about ¼-inch thickness. Season lightly with salt and pepper. Spray your baking rack (is using with olive oil spray)
Place a piece of parchment paper to line your baking sheet fitted with a baking rack. Spray your baking rack (is using with olive oil spray). This allows airflow under the chicken, giving you perfectly golden, crispy edges without frying.
Set Up the Breading StationBowl 1: flourBowl 2: beaten eggsBowl 3: Italian breadcrumbs mixed with Parmesan Dip each piece into the flour, shaking off excess.Dip into the egg wash.Coat fully in the breadcrumb mixture, pressing gently so it sticks.
Place the breaded cutlets on your prepared baking sheet.
Spray generously with olive oil spray.Bake at 400°F for 15 minutes until golden, crispy, and cooked to 165°F internally.
