Ingredients

For The Chicken

  • lbs chicken tenders or chicken breast pounded thin
  • ½ cup flour gluten-free or all-purpose
  • 2 large eggs beaten
  • 2 cups Italian breadcrumbs
  • cup parmesan cheese
  • sea salt
  • ground black pepper
  • olive oil spray

Instructions

  • Place a piece of parchment paper to line your baking sheet fitted with a baking rack. Spray your baking rack (is using with olive oil spray). This allows airflow under the chicken, giving you perfectly golden, crispy edges without frying.
  • Set Up the Breading Station

    Bowl 2: beaten eggs
Bowl 3: Italian breadcrumbs mixed with Parmesan
  • Dip each piece into the flour, shaking off excess.Dip into the egg wash.Coat fully in the breadcrumb mixture, pressing gently so it sticks.
  • Place the breaded cutlets on your prepared baking sheet.
  • Spray generously with olive oil spray.Bake at 400°F for 15 minutes until golden, crispy, and cooked to 165°F internally.
  • Enjoy as-is, with hot honey, ranch, marinara on the side, or on top of salads, pasta, or sandwiches.
