Creamy Ground Beef Stroganoff Bake

This creamy ground beef stroganoff bake with sour cream, caramelized onions, and Gruyère cheese is the ultimate cozy weeknight dinner. Easy, cheesy, freezer-friendly, and packed with comforting flavor. If you have my favorite Caraway dutch oven (apply code STACIE at checkout on their website)... you can boil and drain your noodles, cook the beef mixture, stir in the cream sauce and noodles, then top with breadcrumbs and slide this into your oven for a one-pot meal. This stovetop to oven dutch-oven pot is one of my favorite pieces in the kitchen.

Ingredients
  

  • 2 lbs ground beef
  • 1 tbsp olive oil
  • 2 yellow onions diced, or sliced
  • 4 cloves garlic roasted
  • 3 tsp fresh thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 tbsp Worcestershire sauce
  • 12 oz egg noodles
  • 1 cup sour cream or Greek yogurt
  • 1 cup cottage cheese blended
  • 1 cup Gruyère cheese
  • ½ cup parmesan cheese
  • ½ cup panko breadcrumbs
  • 2 tbsp butter
  • fresh parsley for garnish
  • fresh thyme for garnish

Instructions
 

  • Boil egg noodles until just al dente. Reserve ½ cup pasta water.
  • Heat olive oil in a large skillet over medium heat. Add sliced onions and cook slowly for 20–25 minutes until deeply golden and caramelized.
  • Add ground beef to the skillet. Cook until browned and fully cooked. Drain excess grease if needed. Set aside.
  • Add: roasted garlic, thyme, paprika, Worcestershire, salt, and ground black pepper. Cook another 2 minutes.
  • In a bowl, combine: sour cream, whipped cottage cheese, beef broth, Gruyère, and parmesan. Mix until smooth.
  • Mix together beef, noodles, and cream sauce in your large skillet. Transfer to a baking dish.
  • Mix: breadcrumbs, melted butter, and parmesan cheese. Sprinkle evenly over casserole.
  • Bake at 375°F for 20–25 minutes until bubbling and golden. Broil on Hi 1-2 minutes for extra crispiness.
  • Remove from the oven and allow to rest for 5 minutes. Finish with fresh parsley or thyme.
