Ingredients
  

  • 1 cup cottage cheese
  • ¾ cup whole milk or substitute for a dairy free milk
  • 1 cup all-purpose flour or gluten-free 1:1 baking flour. See above for substutions
  • 2 tsp baking powder
  • 2 tbsp granulated sugar or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp oil or melted butter
  • ¼ tsp salt

Instructions
 

  • Blend the cottage cheese if desired
  • Mix your dry ingredients in a large bowl. Whisk is the wet ingredients.
  • Combine gently.
  • Rest for 5 minutes.
  • Scoop out the batter and cook in a large, greased skillet over medium-low heat.
  • Flip your pancakes when you start to see bubbles form.
  • Serve warm with your favorite toppings.
