  • 3 tbsp vanilla extract
  • 1 cup almond flour
  • ¼ cup oat flour
  • ¼ tsp sea salt
  • ½ cup mini semi-sweet chocolate chips

Instructions
 

  • Blend the cottage cheese in a blender or food processor until completely smooth and creamy.
  • Transfer the blended cottage cheese to a medium mixing bowl. Stir in the peanut butter, maple syrup, vanilla extract, and sea salt until well combined.
  • Add the almond flour and oat flour. Mix until a thick cookie dough forms.
  • Fold in the mini chocolate chips.
  • Cover and refrigerate for 20–30 minutes to allow the dough to firm up.
