Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish.
Thaw the frozen hashbrowns completely and drain away excess moisture.
In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, melted butter, diced onion, garlic powder, and black pepper.
Add the thawed hashbrowns and 1½ cups of shredded cheddar cheese. Gently fold until evenly coated.
Transfer the mixture to the prepared baking dish and spread evenly.
Sprinkle the remaining ½ cup of cheddar cheese over the top.
Bake uncovered for 45 to 55 minutes, or until bubbling around the edges, golden on top, and heated to 165°F in the center.
Remove from the oven and rest for 5 to 10 minutes before serving.
Recipe Notes
-
Hashbrowns: Use shredded potatoes rather than diced for the closest restaurant-style texture.
-
Cheese: Freshly shredded sharp cheddar melts beautifully and adds more flavor.
-
Soup: Do not dilute the condensed soup.
-
Salt: Taste the finished casserole before adding extra salt because the cheese and condensed soup already contain sodium.
-
Make ahead: Assemble and refrigerate for up to 24 hours before baking.
-
Storage: Refrigerate leftovers in an airtight container for up to 3 to 4 days.
-
Freezing: Freeze baked portions for up to 2 to 3 months for best quality.
-
Reheating: Reheat leftovers to 165°F.
