- 1 cup long-grain white basmati rice uncooked
- 1 3/4 cups water
- 1 tbsp neutral oil divided
- 1 bay leaf
- 2 tbsp fresh lime juice
- 1 tbsp fresh lemon juice
- 1/3 cup fresh cilantro finely chopped
- 3/4 tsp fine salt divided, plus more to taste
Get Recipe Ingredients
Rinse the rice under cool water in a fine-mesh strainer until the water runs mostly clear.
Add the rice, water, 2/3 of the oil, bay leaf, and 2/3 of the salt to a medium saucepan.
Bring to a gentle boil. Reduce heat to low, cover, and simmer for 15 to 18 minutes until the rice is tender and the water is absorbed.
Remove from heat and let rest, covered, for 10 minutes. Discard the bay leaf and gently fluff with a fork.
Whisk together the lime juice, lemon juice, remaining oil, and remaining salt. Pour over the warm rice.
Add the chopped cilantro and gently fold until evenly distributed. Taste, adjust seasoning, and serve warm.
Recipe Notes
For a double or triple batch, use two-thirds of the oil and salt during cooking and add the rest with the citrus. Cooking times may vary for larger quantities. Always check your rice package for recommended water ratios.
