Ingredients
  

  • 1 lb chicken breast cubed
  • 2 tbsp olive oil
  • 2 cups carrots diced
  • 1 small shallot chopped
  • 2 cloves garlic minced
  • 2 tbsp Italian seasoning
  • 1-2 tbsp ground cumin
  • 3 cups wild rice
  • 6 cups chicken stock or water
  • 2 sprigs rosemary or thyme
  • sea salt to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add cubed chicken and sauté until almost cooked through.
  • Add carrots and shallot; cook until softened.
  • Stir in garlic, Italian seasoning, and cumin until fragrant.
  • Add wild rice, chicken stock, and rosemary.
  • Bring to a boil, then reduce to medium-low heat.
  • Simmer until wild rice is fully cooked.
  • Remove rosemary sprigs.
  • Serve warm with a sprinkle of sea salt.
