For The Chicken
- 1.5-2 lbs chicken tenders cut into pieces
- wooden skewers soaked for 10 minute in water
Greek Marinade
- ¼ cup olive oil
- juice of 1 large lemon
- 3 cloves garlic
- 1½ tsp dried oregano
- ½ tsp sea salt
- ½ tsp ground black pepper
- ½ tsp paprika optional
For The Tzatziki
- 1 cup Greek yogurt full-fat preferred
- ½ large cucumber grated & squeezed
- 1 clove garlic minced
- 1 tbsp lemon
- 1 tbsp olive oil
- 1 tbsp chopped dill (or parsley, or both)
- sea salt to taste
For Assembling
- pita bread
- thin-sliced shallots
- thin-sliced tomatoes
- fresh parsley

For The Chicken
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add chicken pieces and toss well. Marinate 20 minutes to 1 hour.
Thread onto soaked skewers.
Preheat your Foreman grill. Brush plates with oil or cooking spray. Grill 4–6 minutes until cooked through. See notes for griddle and outdoor grill.
For The Tzatziki
Grate cucumber, squeeze out liquid. Mix with yogurt, garlic, lemon juice, olive oil, dill, and salt.
Chill 10 minutes to thicken.
Assemble
1. Warm pita.2. Spread tzatziki.3. Add chicken.4. Top with shallots, tomatoes, and parsley.5. Serve immediately.
