Chicken Marinade

This orange-juice based chicken marinade is the marinade that made me fall back in love with chicken. It’s bright, flavorful, tenderizing, and endlessly customizable

Ingredients
  

  • 1 cup orange juice (store-bought or freshly squeezed; ~6–7 oranges if juicing)
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • ¼ tsp crushed red pepper flakes

Instructions
 

  • Place chicken tenders or cutlets in a 9×13 casserole dish. If using thicker chicken breasts, slice them into thinner cutlets for even cooking. Prick each chicken piece with a fork to help the marinade penetrate.
  • In a bowl, mix all the ingredients together.
  • Pour the marinade over the chicken. Make sure each piece is fully coated. If layering chicken, increase the marinade so every layer is covered.
  • Cover and refrigerate:
    30 minutes minimum
    2–4 hours ideal
    Up to 8–12 hours max (because citrus tenderizes quickly)
  • Preheat oven to 400°F.
  • Line a baking sheet with parchment and place a baking rack on top, optional.
  • Arrange marinated chicken on the rack, letting excess marinade drip off.
  • Bake:
    Tenders: 15–18 minutes
    Thin cutlets: 18–20 minutes
    Breasts: 20–25 minutes
    Thighs: 25–30 minutes
  • Optional: Broil 1–2 minutes for crispier caramelized edges.
  • Cook until internal temperature reaches 165°F.

Notes

Assumptions for Revised Calculation

  • Only ~2–3 tablespoons of marinade cling to the chicken (typical for wet marinades).
  • The rest is discarded.
  • The oil contributes the most because it adheres better than juice.
  • Seasonings contribute minimal calories; salt still contributes some sodium.
