Chicken Marbella

Classic Chicken Marbella made with prunes, olives, capers, and garlic. This easy baked chicken recipe is juicy, sweet-savory, and perfect for entertaining.

Ingredients
  

  • 4 lbs bone-in, skin-on chicken thighs and drumsticks
  • 1 head garlic peeled and smashed. Head refers to the whole bulb, not a single clove.
  • cup olive oil
  • ¼ cup red wine vingear
  • 1 cup pitted prunes
  • 1 cup green olives
  • ¼ cup capers with juice
  • 2 bay leaves
  • 1 tbsp dried oregano
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ cup dry white wine
  • ¼ cup dark brown sugar light brown works too

Instructions
 

  • In a large bowl, combine chicken, garlic, olive oil, vinegar, prunes, olives, capers, bay leaves, oregano, salt, and pepper.
  • Cover and refrigerate overnight.
  • Preheat oven to 375°F (190°C).
  • Arrange chicken and marinade in a large baking dish.
  • Pour wine around chicken and sprinkle with brown sugar.
  • Bake uncovered for 50–60 minutes, basting once halfway through, until golden and cooked through.
  • Rest for 5 minutes before serving.
