- 4 lbs bone-in, skin-on chicken thighs and drumsticks
- 1 head garlic peeled and smashed. Head refers to the whole bulb, not a single clove.
- ⅓ cup olive oil
- ¼ cup red wine vingear
- 1 cup pitted prunes
- 1 cup green olives
- ¼ cup capers with juice
- 2 bay leaves
- 1 tbsp dried oregano
- 1 tsp salt
- ½ tsp ground black pepper
- ½ cup dry white wine
- ¼ cup dark brown sugar light brown works too

In a large bowl, combine chicken, garlic, olive oil, vinegar, prunes, olives, capers, bay leaves, oregano, salt, and pepper.
Cover and refrigerate overnight.
Preheat oven to 375°F (190°C).
Arrange chicken and marinade in a large baking dish.
Pour wine around chicken and sprinkle with brown sugar.
Bake uncovered for 50–60 minutes, basting once halfway through, until golden and cooked through.
Rest for 5 minutes before serving.
