Ingredients
  

  • 2 cups cooked chicken breast, cubed or shredded or rotisserie chicken, shredded
  • 1 cup cooked ham diced
  • 2 10.5-oz can low-fat cream of chicken soup
  • 1 cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 2 cups swiss or gruyere cheese shredded
  • salt and ground black pepper to taste
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • fresh parsley

Optional Add-Ins

  • 1 cup steamed broccoli florets
  • ½ cup sauteed mushrooms
  • 1 cup peas or carrots
  • 1 tsp fresh thyme or rosemary

Noodle Choices (Optional)

  • 8 oz cooked egg noodles
  • 8 oz cooked rotini or penne
  • whole wheat or gluten free noodles all work beautifully!

Crispy Breadcrumb Topping (Optional but Highly Recommended)

  • ½ cup plain breadcrumbs or panko
  • 1 tbsp butter melted
  • 1 tbsp parmesan cheese grated, optional
  • ½ tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).Grease a 9×13 casserole dish lightly with cooking spray.
  • In a large mixing bowl, whisk together low-fat cream of chicken soup, Greek yogurt, dijon mustard, garlic powder, onion powder, salt & pepper. Mix until smooth and well-combined.
  • Spread half of the sauce in the bottom of the casserole dish.
  • Add chicken, ham, and then your preferred noodles (if using).
  • Sprinkle in your veggies — broccoli, mushrooms, peas — whatever you love.
  • Top with the rest of the sauce. Sprinkle shredded cheese evenly over the top.

For the crispy breadcrumb topping

    In a small bowl, mix breadcrumbs, melted butter, Parmesan (if using), garlic powder, salt, and pepper until evenly coated.

    • Sprinkle the breadcrumb mixture evenly over the casserole. If you want extra browning, broil for 1–2 minutes at the end, watching closely.
    • 💡 Tip:For an even lighter topping, reduce breadcrumbs to ⅓ cup and skip the butter—spritz lightly with cooking spray instead.
    • Cover with foil and bake for 25-30 minutes.
    • Remove foil and bake an additional 10-12 minutes until the cheese is melted and bubbly.
    • Let it sit for 5–10 minutes before serving — this helps the casserole set and makes slicing easier. Garnish with fresh parsley, cracked black pepper, or even a sprinkle of smoked paprika.
