Ingredients
  

  • 1 cup butter unsalted or salted, softened
  • 1 cup granulated sugar
  • ½ cup dark brown sugar or light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 ts vanilla extract
  • cups all-purpose flour or gluten-free flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup granulated sugar for rolling

Instructions
 

  • Preheat oven to 350°F.
  • Line baking sheets with parchment paper.
  • Cream butter, granulated sugar, and brown sugar until fluffy.
  • Add egg, egg yolk, and vanilla. Mix until combined.
  • Whisk flour, cornstarch, baking soda, and salt.
  • Gradually add dry ingredients to wet ingredients. Mix just until combined.
  • Scoop dough into 2-tablespoon portions.
  • Add ¼ granulated sugar to a small bowl.
  • Roll into balls. Coat each ball in sugar.
  • Place on prepared baking sheets. Bake for 9–11 minutes.
  • Cool on the baking sheet for 5 minutes.
  • Transfer to wire rack.

  • Do not overbake.
  • Centers should appear slightly underdone.
  • Chill dough if kitchen is warm.
  • Store in airtight container for best texture.
