- 1 cup butter unsalted or salted, softened
- 1 cup granulated sugar
- ½ cup dark brown sugar or light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 ts vanilla extract
- 2¾ cups all-purpose flour or gluten-free flour
- 2 tsp cornstarch
- 1 tsp baking soda
- ½ tsp salt
- ¼ cup granulated sugar for rolling

Preheat oven to 350°F.
Line baking sheets with parchment paper.
Cream butter, granulated sugar, and brown sugar until fluffy.
Add egg, egg yolk, and vanilla. Mix until combined.
Whisk flour, cornstarch, baking soda, and salt.
Gradually add dry ingredients to wet ingredients. Mix just until combined.
Scoop dough into 2-tablespoon portions.
Add ¼ granulated sugar to a small bowl.
Roll into balls. Coat each ball in sugar.
Place on prepared baking sheets. Bake for 9–11 minutes.
Cool on the baking sheet for 5 minutes.
Transfer to wire rack.
Notes

- Centers should appear slightly underdone.
