Ingredients
  

  • lbs ground beef
  • 1 small shallot diced, or onion (any)
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ cup water

Burritos

  • 6 large flour tortillas
  • 2 cups cooked rice
  • 1 red bell pepper diced, optional
  • cherry tomatoes diced, optional
  • 1 can black beans drained and rinsed
  • 2 cups shredded cheddar cheese or Monterey Jack cheese
  • 1 cup pico de gallo
  • 1 avocado sliced
  • ½ cup sour cream or Greek yogurt
  • fresh cilantro chopped
  • fresh lime for garnish

Instructions
 

  • Brown ground beef and shallot in a skillet over medium heat.
  • Drain excess grease if needed.
  • Stir in tomato paste, seasonings, and water.
  • Simmer until thickened and flavorful.
  • Warm tortillas until soft.
  • Layer rice, beans, beef, cheese, and toppings onto tortillas.
  • Roll tightly into burritos.
  • Toast in a skillet until golden brown if desired.
