Bakery-Style Peanut Butter Cookies

These bakery-style peanut butter cookies are thick, soft, chewy, and loaded with rich peanut butter flavor. Made with simple pantry ingredients, they're easy to make and stay soft for days.

Ingredients
  

  • 1 cup butter unsalted or salted, softened
  • cup creamy peanut butter
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • flakey sea salt to top

Instructions
 

  • Preheat oven to 350°F
  • Line baking sheets with parchment paper.
  • Beat butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time.
  • Mix in vanilla extract.
  • In a separate bowl whisk together flour, baking soda, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients.
  • Mix until just combined.
  • Cover dough and refrigerate for 1 hour.
  • Scoop large 3-tablespoon portions of dough.
  • Roll gently into balls.
  • Place on prepared baking sheets approximately 3 inches apart.
  • Do not flatten.
  • Bake for 11–13 minutes or until edges are lightly golden.
  • Remove from oven and immediately sprinkle with flaky sea salt. Cool on baking sheet for 10 minutes.
  • Transfer to a wire rack to cool completely.

Notes

  • For thicker cookies, chill overnight.
  • For extra peanut butter flavor, add ½ cup peanut butter chips.
  • For chocolate lovers, fold in 1 cup chocolate chips.
  • Cookies will continue baking as they cool.
