Bakery-Style Chocolate Chip Cookies

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour or gluten-free flour
  • 1 cup bread flour or gluten-free flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • 1 tsp sea salt

Wet Ingredients

  • 1 cup unsalted butter
  • 1 cup dark brown sugar
  • ½ cup granulated
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips or dairy-free chips
  • 1 cup dark chocolate or dairy-free dark chocolate

Instructions
 

  • Brown butter over medium heat until golden and nutty. Cool slightly. See blog post for tips.
  • Whisk together dry ingredients.
  • Combine butter and sugars until glossy.
  • Add egg, yolk, and vanilla.
  • Fold in dry ingredients.
  • Add chocolate chips and chunks. Fold to combine.
  • Chill dough for at least 2 hours.
  • Scoop large dough balls
  • Bake at 375°F for 11–14 minutes
  • Sprinkle with flaky sea salt.
