Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour or gluten-free flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Wet Ingredients

  • ½ cup vegetable oil
  • ½ cup dark brown sugar packed, or light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • ½ cup plain Greek yogurt or sour cream

Mix In's

  • 2 medium apples peeled, optional, and diced
  • ½ cup peans or walnuts chopped, optional
  • ½ cup white chocolate chips, caramel bits, or cinnamon chips optional

Instructions
 

  • Preheat your oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Peel, core, and dice the apples into small, even pieces.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, and Greek yogurt until smooth.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  • Fold in the diced apples and any optional mix-ins.
  • Spread the batter evenly into the prepared loaf pan.
  • Bake for 55–65 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  • If the top begins to brown too quickly, loosely cover with foil during the final 15–20 minutes of baking.
  • Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.Slice and enjoy!
