Preheat oven to 425°F.
Add diced sweet potatoes to a sheet pan. Toss with olive oil, smoked paprika, turmeric, salt, and pepper.
Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
While the sweet potatoes roast, heat olive oil in a large skillet over medium-high heat.
Add onion and cook for 3–4 minutes until softened.
Add garlic and cook for 30 seconds.
Add ground beef and cook until browned, breaking it apart as it cooks.
Stir in oregano, cumin, smoked paprika, turmeric, salt, and pepper.
Add cherry tomatoes and cook for 2–3 minutes.
Stir in spinach until wilted.
Add roasted sweet potatoes to the skillet.
Finish with olives, lemon juice, parsley, and feta cheese.
Serve warm.
