Marinate the Chicken:
In a medium bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken and marinate for at least 20 minutes or up to overnight.
Prepare the Breading:
Place the flour in one shallow bowl, the beaten eggs in another, and the panko breadcrumbs in a third.
Bread the Chicken:
Remove each chicken cutlet from the buttermilk. Dredge in flour, dip into the eggs, then coat thoroughly with the panko breadcrumbs. Press gently so the breadcrumbs adhere well.
Air Fry:
Preheat the air fryer to 390°F.
Lightly spray both sides of the breaded chicken with olive oil cooking spray.
Arrange in a single layer in the air fryer basket.
Cook for 12–14 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F.
Allow the chicken to rest for 5 minutes before slicing.
Make the Sauce:
Whisk together the Greek yogurt, mayonnaise, Dijon mustard, garlic powder, lemon juice, salt, and pepper until smooth.
Assemble:
Warm the tortillas for about 20 seconds.
Spread the sauce over each tortilla.
Top with:
Lettuce
Tomatoes
Red onion
Cheddar cheese
Crispy sliced chicken
Extra sauce if desired
Fold in both sides and roll tightly.
Toast (Optional)
Place the wrap seam-side down in a dry skillet for 2–3 minutes per side until lightly golden.
Slice in half and serve immediately.
