Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

Dreams come true! Not talking about the bread, but how EASY it is to make this! Well…and the bread. Did I mention it is guilt-free made with no eggs, oil, and wholesome ingredients?

Blender style bread you can watch on the Tube (YouTube) to view the quickest way to combine everything together!

Now, we are using very fine flours here so the center is super soft. My mother’s oven bake everything at the speed of light where mine does not. So, depending on your oven I say 30-35 minutes is golden, however, if you KNOW your oven bakes fast maybe 30 would be perfect or even 25/28 minutes.

If you want, add in rolled oats at the end when mixing in the chips for extra layer of hearty texture. I also just blend rolled oats anyways when I don’t have oat flour. I find myself rolling on a budget a lot and this saves at least 7 bucks! I will disclose and tested this, it takes LESS time to bake because rolled oats have more space for absorption where as fine oat flour has less. Either way, everyone’s baking time will be different, especially depending on the pan you use!

Use any chocolate and nuts/seeds you like, m&m’s are a great choice in here, too.

It was torturous to wait on this bread to cool. I almost sliced it on the pan! Haha! I am practicing patience! Wait at least 15 minutes, you will thank me!

Ingredients

  • 1 1/2 cup rolled oats or oat flour
  • 1 cup almond flour
  • 2 medium banana or 1 cup
  • 1/2 cup yogurt or apple sauce
  • 1 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 teaspoon all spice (optional)
  • 3/4 teaspoon vanilla extract
  • 1/2 cup maple syrup or honey
  • 1 1/2 teaspoon vinegar (I use apple cider vinegar)
  • 1/3 cup milk
  • Chocolate chips (optional)
  • Nuts (optional)

Directions

  1. Pre-heat oven to 350 F. Grease 9×5 loaf pan.
  2. Blend everything in blender.
  3. Bake 25-30-35 minutes. Let cool 15-30 minutes in pan. Some people have said 25 minutes, some say 30, and some tell me 35. I leave mine in for 30 minutes. For a little bit more done, 33-35 minutes is perfect.
  4. If you do not have oat flour, I blended my oats first until finely ground and then added in everything else. No big whoop!
