Roasted Garlic Parm Shrimp

A versatile recipe that can be used as an appetizer, a topping over pesto rice bowl (as shown below), swirled in pasta, etc. Endless ways to enjoy this shrimp, I love that!

Best part about this flavor-town bite is you can adjust the amount of anything in this recipe based on your pallet. I love garlic so I go pretty heavy at times and the Parmesan hits the shrimp with the salty touch to leaves the pepper to pack in the punch at the end.

These need zero sauce, leaving you with a protein packed snack or meal for under 11 bucks! 1 pound of shrimp for me was on sale for 9 bucks and the rest was pennies once I distributed the remaining ingredients. 6 servings for 11 bucks, and you can re-purpose to add to any meal!

Roasted Garlic Parm Shrimp

  • Servings: 6

Ingredients

  • 1 pound medium cooked shrimp
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 cup shredded Parmesan, divided
  • Pepper to taste
  • Parsely, minced for sprinkling

Directions

  1. Pre-heat oven to 350 degrees F. Line baking with parchment paper.
  2. In a large bowl, add shrimp, olive oil, garlic, oregano, half Parmesan, pepper. Toss to combine.
  3. Pour everything in one even layer on to prepared baking pan.
  4. Bake 7 minutes.
  5. Remove, immediately sprinkle with remaining Parmesan. Extra pepper, optional.
  6. Sprinkle with minced parsley before servings.
