French Toast Casserole

Who said you can’t have a casserole on a week day morning? Featuring the easiest way to feed your family with a simple casserole that can be made the night before and ready for the next morning or the day of. Hassle-free is the way to be!

This casserole features cinnamon raisin English muffins. You can use any bread you like, but do add more cinnamon and raisins! Sour dough is a good one to stick to if you do not want to buy cinnamon raisin English muffins, but you will be missing out!

This casserole came together in minutes. It is a slicing, mixing, and pouring. This is a grown-up version using coffee liqueur, however, you can totally discard that completely and add chocolate chips! Ha!

I do have a few notes below the recipe you will want to scroll through on the bottom before you dive into this. The topping and glaze are optional. For what ever reason you feel to add the coffee liqueur to your glaze instead of all milk, this is a no judgment zone and would be disappointed if you didn’t try it! I am only partly kidding! *wink*wink*

French Toast Casserole

Prep Sunday, pop in oven Monday for a hassle-free breakfast!

Ingredients

For the casserole:

  • 10 cups cubed cinnamon raisin bread*
  • 1/2 cup pecans, chopped (optional)
  • 5 large eggs
  • 5 1/2 cups whole milk**
  • 2 tablespoon dark brown sugar***
  • 1 1/4 teaspoon ground cinnamon
  • 1/8 cup coffee flavored liqueur (optional)

For the topping:

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons dark brown sugar

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or half-and-half

Directions

For the casserole:

  1. Pre-heat oven to 350 degrees F. Lightly grease casserole dish.
  2. Spread chopped pecans in the bottom of the dish, then bread. set aside.
  3. In a large bowl, beat eggs rapidly for 30 seconds. This helps give them a lightness int eh dish so you don’t end up with egg casserole instead!
  4. Then whisk in milk, sugar, cinnamon, and liqueur.
  5. Pour mixture over the bread evenly soaking pieces thoroughly.

For the topping:

  1. Mix together melted butter and sugar. Drizzle over entire casserole. I found it best to use a spoon!
  2. Place casserole into the oven for 38-45 minutes.
  3. Let rest a full 10 minutes before servings.

For the glaze:

  1. Mix powdered sugar and milk, by the tablespoon together. For thicker glaze, add more powdered sugar. For thinner, add more liquid.
  2. Drizzle over warm casserole.

*I used Mikey’s grain-free English muffins, use whatever bread you like!

**I have test this with 2% milk and it works just fine. I have not tested with dairy-free milk but I couldn’t see how it would change anything? Hmmm…

***Lastly, this is the original recipe, I used honey as a substitute for the sugar and worked just fine! However, if you have brown sugar, definitely use it!
