No Bake Frozen Strawberry Pie

Frozen pie is one of my favorites, but a no bake is my all time favorite!

This is a simple way to whip something up in 10 minutes and let the freezer do the rest of the work.

A food processor is super important in this recipe. You can snag one at Khol’s for about 60-70 bucks. Best investment I have ever made!

I use it for “nice cream,” which is just frozen fruit and liquid processed together, I use it to make energy balls, I use it to make my own oat and almond flour…Shall I go on?! It is a life saver, time saver, and money saver!

This recipe calls for strawberries which blueberries can totally be substituted for half or all the strawberries. For raspberries or blackberries, after you process you will need to push the mixture through a strainer to get out all the seeds.

This is why I picked something easy and still flavorful! Another way to boost your flavors is to use flavored yogurt. Avoid Greek yogurt for this recipe as it will be too thick, regular non-Greek is the way to go!

You can go without the almond in the crust or really use any nut you love. I like them just for a little texture along with the chocolate blended into the filling. If you want more chocolate, add in 1/2 tablespoon into the food processor with the berries and sugar in the processor.

No Bake Frozen Strawberry Pie

Ingredients

For the crust:

  • 27 dates, pitted
  • 2 cups rolled oats
  • 1/4 cup almonds

For the filling:

  • 1/3 cup bitter-sweet chocolate, melted
  • 2 3/4 cups chopped strawberries
  • 2/3 cup granulated sugar
  • 8 ounces cream cheese, room temperature
  • 1 cup strawberry yogurt
  • 1/2 cup confectioner’s sugar
  • 1/2 cup whipped cream

Directions

For the crust:

  1. Line a 9 x 13 baking pan with parchment paper.
  2. In food processor, process dates, oat flour, and almonds until well combined.
  3. Press mixture into one even layer into prepared dish.
  4. Place into freezer while preparing the filling.

For the filling:

  1. In a small, microwave safe bowl, melt chocolate in 30 seconds increments. No more than 1 minute.. Keep a close eye on it.
  2. In food processor, process berries and sugar together until liquidity.
  3. In a large bowl, using a hand mixer, beat cream cheese until soft and fluffy.
  4. Add yogurt and confectioner’s sugar, mix well.
  5. Pour in 3/4 of the strawberry mixture and melted chocolate into mixture. Beat until combined, chocolate will break into tiny pieces.
  6. Taste, then if you want more strawberry flavor, add more. I use just about all of mine.
  7. Fold in whipped cream.
  8. Pour mixture over crust. Freeze for 4 hours. Let sit 5 minutes before cutting.
  9. Cover, freeze for up to 1 month.

*You can substitute blueberries for all or half the strawberry for a mixed berry dessert.
