Broccoli Tot Pizza

Two recipes in one! This pizza is much quicker to make using a thawed bag of store bought broccoli tots. however, you can always make tot mixture and then make the pizza so everything is homemade! I usually just buy store bought because the tots thaw out on my way home so I can add the cheese and get my crust in the oven. On a weekend, I make my own tots!

This was sooo much fun to make! A healthy version of a pizza crust that i actually prefer over regular crust! It is flavorful and packed with veggies or you can add a simple pesto and parmesan cheese and call it a day!

It has a crunch on the bottom crust, a nice bite, and hold up just like a slice of pizza! I know…I know… for everyone out there rolling their eyes, pizza CAN be healthy and delicious, too! Who ever said it couldn’t be done? Send them to me!

Broccoli Tot Pizza

Ingredients

For the Tots:

  • 2 cups fresh broccoli, uncooked
  • 1 large egg
  • 1/3 cup shredded cheese
  • 1/3 cup panko breadcrumbs
  • 1/3 cup Italian breadcrumbs
  • 1 tablespoon parsley, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Dash onion powder
  • Dash garlic powder

For the pizza:

  • Broccoli tots (either recipe above) or buy 1 16-oz bag frozen.
  • 1/3 cup finely grated Parmesan cheese
  • 1/2 – 3/4 cups ricotta cheese
  • Veggies of your choice
  • 1/2 cup mozzarella cheese

Directions

For the tots mixture:

  1. See notes for only broccoli tots.*
  2. In a large bowl, fill half way with water and add 1 cup of ice creating a water bath.
  3. Blanch the broccoli in boil water for 1 minutes, remove and shock in the ice bath to stop the cooking process. Then drain.
  4. Chop broccoli finely and mix thoroughly with egg, cheese, breadcrumbs, parsley, salt, pepper, onion powder. Follow remaining directions below, skip over direction number 1.

For the pizza:

  1. If using frozen allow to thaw completely.
  2. Pre-heat oven to 425 degrees F. Invert your baking pan, spray the bottom of the pan then lay parchment paper down (help the parchment stick to pan).
  3. Add Parmesan cheese, mix with a fork
  4. Add Parmesan cheese, mix together with a fork.
  5. Using your hands, place mixture on to parchment paper make a 1/4-inch disk, like a pizza dough crust.
  6. Bake 25 minutes.
  7. Let rest 5. Reduce oven heat to 400.
  8. Spread on ricotta, add toppings, then mozzarella cheese.
  9. Place back into oven for 5 minutes until cheese is melted.
  10. Slice and serve!

*For broccoli tots without making the pizza, pre-heat oven 400 degrees F and line baking sheet with parchment. Mix ingredients under “tot mixture,” shape into tot shape, bake 18-22 minutes.
