Chocolate Mousse

An anytime dessert that is effortless, decadent, and extra smooth!

I love this recipe in particular because it is not over sweet thanks to the dark chocolate. Of course, use any chocolate you like, however remember the lighter the sweeter!

This is perfect for a romantic night in or a typical Saturday night binge watching Modern Family. It is my favorite show, you gotta have a sense of humor in order to love it!

I place fruit, nuts, chocolate, and sometimes Nutella if I am feeling extra naughty!

The time here is quick, takes no more than 10 or so minutes to prep, it is the chill time that is the longest!

VEGANS and DAIRY-FREE: Melt chocolate in a heat proof bowl either in microwave or using a double boiler. Drain 1 can chick peas reserving the juice. Whip the juice using a hand beater until thick and fluffy. Fold in melted chocolate, cover and refrigerate!

Chocolate Mousse

Ingredients

  • 2 3/4 cups heavy cream
  • 1 cup dark chocolate, chopped
  • 1/8 teaspoon espresso powder, optional
  • 1 teaspoon vanilla extract

Directions

  1. In a small sauce pan over medium low heat, heat 1 1/4 cup heavy cream.
  2. In the mean time, place chocolate and espresso powder into a large bowl. Set aside
  3. Heat cream until steam starts to appear, about 5-6 minutes.
  4. Pour heated cream over chocolate and espresso powder. Let sit for 30 seconds, begin to whisk until smooth.* See notes.
  5. In a standing mixer fitted with the whisk, or a hand mixer, beat on high the remaining heavy cream until stiff peaks form to create whipped cream.
  6. Fold in the chocolate using a spatula so you don’t take all the air out of the whipped cream. You want it light and fluffy.
  7. Immediately cover and place in the refrigerator for 1 hour minimum.
  8. Serve with fresh fruit and chocolate squares!

*You can place cream in a heat proof bowl rather than sauce pan, heat in microwave in 30 second intervals. Let the chocolate get hot from the heated cream and then whisk away!

*If it is not melted, pop in micro in 10 second intervals, stirring between!

**For mocha mousse, add 1 full teaspoon espresso powder.
