A way to create your own breakfast flavor! Bake your oatmeal to feed a crowd or a small party of one featuring an appropriately crunchy top with a soft baked middle filled with surprises.
I used all non-dairy products and they turned out great! I love berries and chocolate, but I think peaches with extra cinnamon to copy cat peach cobbler would be amazing! The idea keep rolling!

Baked Oatmeal
Ingredients
- 1 large banana, mashed
- 1 whole egg
- 3/4 cup milk
- 1 tablespoon butter or coconut oil, melted and cooled
- 1/4 teaspoon vanilla extract
- 1 1/4 cup rolled oats
- 1/2 teaspoon baking powder
- 1/4 ground cinnamon
- 1/2 cup chopped strawberries
- 1/4 cup blueberries
- 1/4 cup mini chocolate chips
- Nut butter of your choice
Directions
- Pre-heat oven to 350 degrees F. Spray a 9 x 5 baking loaf liberally.
- In a medium bowl, whisk mashed banana, egg, milk together.
- Add butter, whisk thoroughly. Then add vanilla.
- Fold in oats, fruit, and chocolate chips.
- Pour mixture into prepared loaf pan.
- Bake 35-40 minutes.
- Remove, let set for 5 minutes.
- Top with nut butter, cut and serve warm!
