Hearty noodles in a light soup to feed your soul.
This delicious bowl uses simple ingredients and all in one pot! Better yet, a meal in under 30 minutes!
Short cuts include rotisserie chicken or turkey. If you decide to use cooked meat, add in after noodles are cooked just to warm the chicken and allow the meat to absorb some of the juice. Remove from the heat after noodles are cooked to add in your meat of choice.
Same for noodles, if you keep cooked noodles on hand as myself, after chicken is cooked you will remove from the heat and add noodles in last. Allow them to sit about 5 minutes to heat through.
If you have both cooked chicken and noodles on hand, heat up broth, add parsley, and then add in meat and noodles.
Sometimes it pays to meal prep before hand, but still….you can basically shower while everything cooks after you add the noodles. Who ever said you weren’t a multi-tasker?!
Home-style Chicken Soup
Ingredients
- 1 tablespoon butter
- 2 celery ribs, chopped
- 4 long carrots, sliced
- 8 cup chicken broth
- 1 pound uncooked boneless skinless chicken breast, diced
- 1 12-ounce bag egg noddles, uncooked
- 2 tablespoons chopped parsley
- Salt + Pepper to taste
Directions
- In a large pot over medium heat, melt butter.
- Add in celery, stir for a minute or so.
- Add in carrots, saute 3 minutes.
- Pour in broth and add chicken, cover and bring to a boil.
- Once at a boil, add egg noodles, cook 12 minutes.
- Sprinkle in parsley, salt, and pepper. Serve warm with your favorite crackers or crusty bread!
