Homemade Chili

I love a hearty bowl of comfort food. Chili is one of those dishes. I like it mild or spicy with extra cheese and Frito’s!

I grew up on McCormick’s mild chili seasoning and it is my go-to cheat seasoning. I wanted to try it homemade and I am pretty happy with it! You can add as much spice as you want. The chili beans gives this dish a lot of flavor, too. The fire roasted tomatoes gives a slight smokey taste but I promise you won’t mind it!

I never topped my chili before except with cheese, I was surprised at what the avocado brought to the chili. It was creamy and really added a smooth texture with the sour cream. It was served Texas style featuring jalapeno’s for an extra kick! Yee-Haw!

Homemade Chili

Any cracker works here. Adds a great crunch element!

Ingredients

  • 1 pound ground beef
  • 1 cup beef broth
  • 1 15-ounce can fire roasted diced tomatoes
  • 2 1/2 tablespoons tomato paste, garlic seasoned
  • 1 16-ounce can kidney chili beans
  • 1 16-ounce can pinto chili beans
  • 1 tablespoon chili powder
  • 1/2 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sugar
  • 1/4 teaspoon garlic powder
  • Dash cayenne pepper, optional

Garnish/Toppings:

  • Cilantro
  • Sour cream
  • Grated sharp cheddar cheese
  • Avocado, diced
  • Red onion
  • Fresh jalapeno, slicedĀ 

Directions

  1. In a large pot over medium-high heat, brown the meat.
  2. Drain excess fat.
  3. Keep the heat high, add broth, diced tomatoes, tomato paste, kidney beans with juice, pinto beans with juice, and spices.
  4. Stir and let mixture come to a low boil.
  5. Reduce heat to medium-low, keeping at a simmer. 5-8 minutes.
  6. Sauce will start to thicken.
  7. Begin to slice any toppings.
  8. Spoon chili over Frito’s, garnish, and enjoy!

Ground turkey works well instead of red meat. I would opt for bone broth, vegetable broth, or chicken broth versus beef.

Add more spice or red chili flakes for more spice and customized to your taste!

I like to garnish with cilantro, avocado, jalapeno, cheese and a dollop of sour cream!

If Frito’s are not your thing, try oyster crackers. I like wheat saltines if I’m trying be healthy-ish…..
