One Bowl Cookie Dough

Nothing beats my Best Ever (Not Kidding) Chocolate Chip Cookies, but these are a contender! I use this recipe to stuff the cookie dough with a surprise middle (see below for recipe links). The cornstarch combined with flour can “soften” harsh proteins resulting in a more tender baked good.

I love to use chocolate bars and chop them rather than the chips, however I did not in the picture below. I usually chop a 4-ounce chocolate bar that shaves the chocolate and you get bits and small slivers added into the dough. There is chocolate in every single bite! Who doesn’t love this?

Use these to make stuffed Nutella, peanut butter cup, Mint cookies….or roll and bake!

For these bakery style cookies, the edges will be golden because your butter is browning. Unlike softening your butter, we have melted the butter to give that gooey texture and slightly crispy edge.

They may not look done after 11 minutes, but leaving them on the pan for 1 or 2 minutes will help continue to bake the center without over-baking the rest of the cookie!

One Bowl Cookie Cookie Dough

Ingredients

  • 1 cup salted butter (2 sticks), melted
  • 1 cup dark brown sugar
  • 2/3 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 2/3 cup flour
  • 4-ounce bar semi-sweet chocolate bar

Directions

  1. In a large microwave safe bowl, melt butter. Remove and whisk to cool for 1 minute.
  2. Whisk brown sugar and granulated sugar into the melted butter.
  3. Add eggs one at a time. Whisk after each.
  4. Mix in vanilla extract. Mix thoroughly.
  5. Whisk in salt, cornstarch, baking powder, baking soda.
  6. Using a spatula, mix in flour in 2 batches.
  7. Chop chocolate bar into small bits and pieces. Fold into dough.
  8. Cover, place dough in refrigerator for 15-30 minutes.
  9. Pre-heat oven to 325 degrees F. Line baking sheet with parchment.
  10. Scoop dough and roll into 1 inch thick balls, place on sheet. 6 fit on to one sheet.
  11. Bake 11-12 minutes.
  12. Remove from heat and let cookies rest for a minute on baking sheet.
  13. Place cookies onto a platter. Serve with cold milk, yum!
