Make this as pumpkin flavored as you would like. Stove-top homemade cocoa with a blast of pumpkin to warm you this holiday season!
This makes enough for 2 people. It is very rich! Plus, you can also save a little of the pumpkin mixture and add to your morning coffee. Pumpkin morning, noon, and night!
Pumpkin Spice Hot Cocoa
Ingredients
For the pumpkin mix:
- 1/3 heaping cup pumpkin puree
- 1/2 tablespoon dark brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon pumpkin pie spice
- 1/2 tablespoon maple syrup
For the cocoa:
- 1/2 cup water
- 1/4 cup unsweetened cocoa powder
- 1 1/2 tablespoon granulated sugar
- 1 1/4 cup milk
- 1/4 cup semi-sweet chocolate chips
- Pinch of salt
For the whipping cream:
- 1/2 cup heavy whipping cream
- 1 heaping tablespoon pumpkin mixture
Directions
For the pumpkin mixture:
- Combine all ingredients in a small bowl. Set aside
For the hot cocoa:
- Over medium-low heat in a sauce pan, combine water, cocoa powder, sugar, and milk. Stir until warm and combined.
- Add half chocolate chips. Melt, taste, add the rest if needed.
- Turn heat to low.
- Mix about half to three-fourth’s pumpkin mixture into the warm hot cocoa. Stir until everything is combined. Remove from heat.
For the whipping cream:
- Beat on medium-high the heavy whipping cream in a standing mixer or by hand until soft stiff peaks form.
- Fold in a heaping tablespoon of the pumpkin mixture into whipped cream.
Assembly:
- Pour hot cocoa halfway into a mug, top with whipped cream and enjoy my favorite drink of choice on a cold crisp night!
