How could you PASTABLY not love a meal that is healthy, quick, and cost-saving?!
I am headed to PASTA away the time with some good food, company, and a glass of red! This is the real deal, no IMPASTAS here!
Sun-Dried Tomato Pasta
Ingredients
- 1 box Rotini pasta noodles, uncooked
- 1 box (4 cups) reduced sodium chicken stock*
- 1 14.5-ounce can fire roasted tomatoes
- 2 1/2 tablespoons tomato paste**
- 1 jar capers
- 1 jar sun-dried tomatoes
- 1 teaspoon garlic (optional)
- 1/4 cup water
- 1/2 cup Ricotta cheese***
- 1/4 cup basil, chopped
Directions
- Place uncooked pasta noodles, stock, tomatoes, paste, capers (with juice), sun-dried tomatoes (with juice), and garlic in a large pot.
- Bring to a rapid boil for 2 minutes, turn down to a medium-low simmer.
- Occasionally stir simmering for 13-15 minutes. Check pasta, simmer until pasta is cooked to your liking. Add 1/4 cup water in increments if mixture is too thick.
- Pour in a large bowl, spoon over ricotta cheese, and sprinkle with basil served family style. Or just a BIG bowl for yourself!
*Can substitute bone broth, vegetable broth, or water
**I like to buy the paste with Italian seasoning or a seasoned paste versus plain tomato paste. It adds flavor, however, plain works just as well, too!
***I love ricotta, pictured is shaved Parmesan, use your favorite cheese! Ricotta makes it creamy and dreamy!
Add sauteed mushrooms, peppers, onions to taste. (Optional)
I made this recipe for my husband and parents the other night and it was a HUGE hit!! I didn’t realize you could make pasta + sauce all in one bowl… you don’t waste anything! The bone broth makes the pasta soo much more flavorful! This one has become a staple in my home. Thanks for sharing Stacie!
