Toothpick Appetizer Smoked Salmon Goat Cheese Roll Ups

Easy appetizers should be ones that you can toss together with simplicity and make ahead! My make ahead goat cheese spread you can whip up fast and from there you assemble into a toothpick appetizer. I appreciate the work roll up finger food can be, but these roll ups only take a few minutes! For my toothpick appetizer smoked salmon goat cheese roll ups you only need a few ingredients. These will be sure to impress your guests and leave them feeling the snack table guilt free! Appetizers can be heavy and ruin the main course, these healthy roll ups are sure to be the exact opposite!

Smoked salmon is the center of these toothpick appetizers! A dollop of goat cheese spread and a sprinkle of everything bagel seasoning hold together the slivered cucumber shell. I used Pure Flavor poco bites sliced thinly, and carefully, with a knife. If you have a mandolin that would work as well. Once those are sliced I placed them on a paper towel while I prepared the goat cheese spread. The goat cheese is just goat cheese and yogurt whipped together. I didn’t add seasoning like dried oregano or dried Italian seasoning although you could. The everything bagel seasoning will be doing the heavy lifting after I smear the spread on the cucumber for rolling. This is why I left the mixture plain. After that we assemble!

If you don’t have the poco cucumbers near you, grab the traditional cucumbers and use a peeler to cut long strips. You want the strips thin enough to roll like you see below. Pliable!

Smoked Salmon Roll Ups

Pretty much any recipe on sugarfacebakes.com is versatile and favorable to swaps. Use sliced turkey, ham, or any lunch meat. These are great for a kids packed lunch or your own for the office. Just be sure to wrap in cling wrap so the smoke salmon smell doesn’t invade the other items in your box. I really enjoy a piece of cubed chicken with a cherry tomato on the bottom of the roll up for a skewer snack. Remind me of a sandwich without the heavy bread. What you need:

  • Goat cheese
  • Greek yogurt
  • Everything bagel seasoning

To assemble it would go like this: bagel bread, assembled cucumber roll up, bagel bread. You guessed it! It’s a lox bagel on a toothpick, how cute is this? You can do that with any variation of meat and your favorite bread. Enjoy for a fun game day snack or party food and keep it simple!

Equipment

  • Small bowl
  • Spatula
  • Toothpicks

Ingredients
  

  • ¼ cup Goat cheese softened
  • ¼ cup Greek yogurt
  • Cucumbers sliced thin
  • Everything bagel seasoning
  • Smoked salmon or any other deli meat

Instructions
 

  • Mix together the goat cheese and Greek yogurt.
  • Smear a small dollop on your cucumber, sprinkle on everything bagel seasoning.
  • Tear off a piece of smoked salmon to fit the cucumber.
  • Roll up and insert a toothpick. Repeat until all cucumber is gone. If you need to make more sauce just add 1:1 ratio of goat cheese and yogurt.
  • Serve chilled. Enjoy!
  • Store in airtight container in the refrigerator for up to 3 days.
