I find when using a pre-made crust they become flimsy and challenging to work with. The Jus-Rol pie crust requires minimum effort, it is lard free, and no freezing! It is my top choice when taking a short cut, we all know pies can be intimating but Jus-Rol creates simplicity in the kitchen with their pre-made pie crust!

How To Make Summer Berry Pie

First, we start with reducing the firmness of your berries. We breakdown the berries with sugar, cornstarch, and some acid to help cut the sweetness but also help the berries release their juices. Second, we combine the oats, brown sugar, and oil. The oil will help the oats become crispy almost like a berry crisp dessert. Next, we roll out our Jus-Rol pie dough right into our pie pan. If you like, make a fun design with the edges! Lastly, we assemble the pie. Add the berry filling, sprinkle on the oat topping, and let the oven do the rest of the work. Easy as pie!

Ingredients

For the Pie Filling:

  • 1 Jus-Rol Pie Crust
  • 1 1/2 cup blueberries, whole
  • 1 1/2 cup raspberries, whole
  • 1 1/2 cup blackberries, whole
  • 1 1/2 cup strawberries, quartered
  • 2/3 cup granulated sugar
  • 6 tablespoons cornstarch
  • Squirt of lime juice

For the Brown Sugar Oatmeal topping:

  • 1/2 cup rolled oats
  • 3 tablespoons dark brown sugar
  • 1-2 tablespoons olive oil, to coat the oats

Directions

  1. In a large bowl, combine berries, sugar, cornstarch, and lime. Toss to combine, allow to sit for 10-15 minutes stirring occasionally.
  2. Pre-heat your oven to 425 degrees F.
  3. In a small bowl combine oats, brown sugar, and oil. Toss until oats are evenly coated with oil.
  4. Take your Jus-Rol pie shell out of the refrigerator and roll into your 8” or 9” pie pan.
  5. Add your berries filling then sprinkle your oat topping. Place in the oven for 20 minutes.
  6. Reduce heat to 350 degrees F, lay a piece of parchment paper or foil over the pie. Continue to bake for 50 minutes.
  7. Remove the parchment paper or foil and bake another 5 minutes to help the oats crisp up.
  8. Take the pie out for the oven, cool to room temperature, about 5-6 hours. Store in the refrigerator, covered, for up to 5 days.
