The Scones Ingredients

The base of these Simple Cheese Scones with Kefir scones starts with pantry ingredients:

  • Whole-wheat flour
  • Baking powder
  • Salt
  • Butter
  • Sugar
  • Cheese + Seasonings
  • Plain Lifeway Kefir

The trick here is to pulse the butter until they are pea size. Just like my Perfect Pie Crust dough, this dough is very similar!

The best flour for scones

I like a nutty taste and a hearty texture so I typically would reach for whole-wheat flour. Whole wheat flour is high in fiber, has the ability to lower potential risk of stroke and heart disease, reduces inflammation and supports healthy digestion which compliments the benefits of kefir. How To Make Scones

The secret here is use really cold butter! First, take the butter out the wrapper and cut it into chunks. Then, place the butter back in the refrigerator for about 10 minutes. After that I place the flour and butter in my handy food processor. If you don’t have one I highly recommend this one and the mini version for small batch things like sauces, dressings, etc. Next, add the sugar and kefir and give this a few pulses. Now, the sticky process of kneading the dough. I remove the dough from bowl and begin to knead the dough together on a lightly floured surface. Your dough is ready to roll at this stage. Roll into 1-inch thick rectangle or circle and use a large biscuit cutter. My mom always used the top of a drinking glass. Lastly, use the scraps to repeat the process then bake!

Simple Cheese Scones with Kefir

Ingredients

  • 2 cups whole wheat flour or all-purpose
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons cold butter, diced
  • 1/4 cup granulated sugar
  • 1/2 cup plain kefir
  • 1/3 cup loosely packed shredded cheese
  • Dried rosemary

Directions

  1. Pre-heat oven to 425 degrees F. Line baking sheet with parchment paper. Set aside.
  2. First, in a food process, pulse together (18-20 pulses) the flour, baking powder, salt, seasonings (if using) and cold butter.
  3. Next, pulse the blend together until the butter is pea sized chunks Use your best judgement.
  4. Add sugar and kefir, give it 4 more pulses. This is just to combine.
  5. Remove the dough from the bowl and knead into a ball sprinkling the cheese in as you go on a lightly floured surface.
  6. Roll your dough out into a 1/2-inch thick round circle or rectangle. Using a biscuit cutter, start to cut your dough and transfer onto your prepared baking sheet. Repeat this process with remaining scraps.
  7. Bake 10 minutes, remove from the oven and allow biscuits to rest for 1 minute.
  8. Serve and enjoy! Store in an air tight container in the refrigerator for up to 3 days.
