Heart Shaped Strawberry Shortbread Valentine’s Day Cookies

This is my first year ever making cookies for valentine’s day! Can you believe it? What food blogger can take the laziness award other than me this year! I was excited to finally nail a shortbread recipe that is so easy to make with only a few basic ingredients. You can find my tea and almond shortbread cookies with vanilla icing drizzle that is same recipe except with real tea!

To make the dough

Simple cookie recipe here. All you need is to do is mix the wet ingredients together along with the baking powder. Then, you add the flour and finally incorporate the freeze dried strawberries. You can make these heart shaped Strawberry Shortbread Valentine’s Day cookies with your eyes closed after you make it once. A fool proof recipe and really fun to do with the kids! The cookie cutter size is up to you. Keep in mind, if you use different sizes you want bake all the same sized shaped in one batch. For small heart you will reduce your time to about 6 minutes or 7 minutes. For the bigger hearts like you see here, 10 minutes is the magic number.

Heart Shaped Strawberry Shortbread Valentine’s Day Cookies

Ingredients

  • 3/4 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 2 1/4 cup all-purpose flour*
  • 1 bag freeze dried strawberries, finely ground in food processor

Directions

  1. In a large bowl using hand beaters or a standing mixer, beat together tea, butter, sugar, egg, and baking powder.
  2. Add flour, mix well until combined. Beat in freeze dried strawberries until combined.
  3. Place dough in the center of a long piece of cling wrap. Shape the dough into a log shaped form.
  4. Refrigerate dough for up to 1 hour.
  5. Pre-heat your oven to 350 degree F. Line a baking sheet with parchment paper and set aside.
  6. Remove your dough from the refrigerator and place between two sheets of parchment paper. Roll out into a large rectangle about 1/4”-1/2” inch thick.
  7. Using a heart shaped cookie cutter, begin to create 8 heart shaped cookies.
  8. Place cookies on parchment paper and bake 10 minutes. Remove the cookies form the oven and allow to set on the baking sheet for an additional 3 minutes.
  9. Transfer the cookies onto a cooling rack and allow to cool completely.
  10. Store in an air tight container for up to 5 days.
